We caught up with Anh Pham, the founder, to find about out her journey and passion that drove the brand forward.
How did it all start?
Paeonia started from my very first cup of bubble tea. It became a huge passion of mine when I first tasted it in Taiwan when I was just 12 years old. It was an amazing combination of tea, sweetness, textures… it instantly became an addiction! Having had many bubble teas around the UK, I wanted to recreate the moment when I first tasted bubble tea and bring an artisan concept to the UK.
What makes Paeonia really special?
From the very beginning we wanted to do things differently.
All our bubble tea is made using a Teapresso machine imported especially from Taiwan – we’re the first UK shop to use this piece of equipment. The process features a multi-section infusion stage, allowing the tea to brew to optimum temperature before the tapioca balls – or popping balls and other toppings – are added. Unlike other cafes, every bubble tea at Paeonia is made to order, ensuring better flavour, freshness, and taste. We freshly cook tapioca pearls in small batches every three hours to ensure the freshness and quality. We pride ourselves on only using the best tea leaves grown at farms in Taiwan.
